Another super quick and easy soup recipe. Full of heathy ingredients and easy to transport in a flask to work or out for the day. If you’re following slimming world or weight watchers it’s a zero on both plans.
2 punnets of cherry tomatoes
1 small onion
1 small carrot
a squeeze of tomato purée
1 garlic clove
1 veg stock cube
dash of milk
Put the tomatoes in a baking tray, spray with fry lite and season with salt and pepper. Roast for 25mins.
Add a spray of fry lite and the onion, carrot and garlic to a large saucepan and fry on a low heat until soft. Add the tomatoes, stock cube and enough water to cover. Bring to the boil and simmer for 25-30 mins. Finally wizz up with a blender (I use a hand blender straight into the pan) and add a dash of milk to make it a little lighter and creamier (you can leave this out if you prefer)
If it’s a little thick add more water until consistency is how you like it.
‘Ta dah, lunch is served.
