I recently posted a picture of my lunchtime homemade soup on my insta-stories and I got some questions about how I make it. So I thought I would share my recipe with you. I make this so often. It’s healthy and so easy to knock up on a cold winters day (or a gloomy August day!)
Ingredients
500g Butternut Squash (diced)
1 onion
60g red lentils
Chicken stock cube
Salt
Pepper
Boiling water
Method
Add all the ingredients to a large pan and bring to the boil just covering in water.
Boil for 15-20 mins.
Blitz using a hand blender until smooth and season to taste.
Serve piping hot with chunks of granary bread.
